Does anyone have any advice about what information I would need to build a case at an Employment Tribunal that the Employment Agency I worked for was a 'sham' agency? What kind of information would I need to find out & present at the Tribunal?

It does not sound like something that the Tribunal has jurisdiction to hear. Unless you were dismissed or one of the other employment rights apply to you.
